Should be really good. What's your water like were you live? Or did you use bottled/distilled?

You're just not going to get some rich malty deep melanoid flavors but it should be a good beer.

A little melanoid malt goes a long way in my opinion.

It will come out seemingly drier and thinner, which might be a good thing.
 
It also breaks starches

Read Noonan if you want 50 pages on the benefits of decocotion.

I've also heard you can get better control over the wheat yeast strains ester profile with it
