I'm trying to figure out what I want to brew next. I have the Irish Car Bomb stout sitting in the fermenter now (almost 2 weeks). I'm partial to Stouts but thought about trying a porter. Any ideas?
 
I made a pecan porter recently that turned out incredible. Don't have the recipe since I kinda made it up on the fly (boredom and curiosity got the better of me) but you could do something along those lines. Perhaps an old ale?
 
Toasted 1.5lbs of whole pecans in the oven at 350 for about 40min. Put them in a paper bag over night to let some of the oil escape. Threw them into the MLT (half whole/ half crushed) with the rest of the grist. If you're doing extract w/ specialty grains you could just add the pecans in with the steeping grains.
 
you might get tired of having 90+ stouts and porters. maybe an IPA or wheat?
 
Yes I brewed my first IPA last saturday. Was easy .

6# extra light DME

Steeped
.5# of crystal 60L ( I wanted 40L but they didt have it)
.5# veinna
Edit: steeped for 40 mins @ 170-ended @165.

All cascade at 6.2AA%
2oz cascade 60 min
1oz cascade @25
1oz cascade @15
.5 oz cascade at 5
Half oz of dried orange peel @5 (brewers best)
.05 oz ascade flameout

Yeah, I havent tasted it sense brew day ( couldt tast the orange) but I put it all in primary didt use a bag for it thought it might give an extra flavor of orange to the IpA sense I was using all cascade. Also gonna dry hop with cascade havent thought about how much. 1 -2 oz for dry hop sound good?
 
And right after I sent that I thought... you know... I think he shared that... don't mind me... its friday. I will have to check that out. I just upped the whisky in my vanilla beans so it'll be closer to 3 cups vs 2 cups i'm adding. Going to try and rack it to secondary this weekend... wifey isn't on board for me to cook another batch!
 
I'm always a fan of IPAs! It's my favorite style, and I drink an IPA everyday. That's a nice contrast to a stout.

Right now, I have an IPA on tap and an oatmeal stout. It's great to have a choice of such different beers. I also have 10 gallons of IPA in primary, and 5 gallons of an American amber.

I just ordered from Northern Brewer this morning, and I ordered my yeast for a California common. That's something different, too, but very quaffable. If you like that style, it could be something to consider. I really like the malty, toasty, richness (along with the woody northern brewer hops) at this time of year.

I've made her version of the CC and it's quite good, better than the original, to me. It also got me some lager yeast to recycle that I've used for an OktoberFAST and a Pumpkin seasonal, both of which are incredibly good.
 
FYI - Midwest has a 10% off special going this weekend. They have some good kits and their customer service is top notch. Give it a look-see.
 
Yeah I posted earlier about the sale. That's where I have ordered all my stuff from so far. Got a full shopping cart right now!
