First time, long time newbie in Boca Raton, FL checking in.

Just tasted my first batch. Went with a Hefe on the recommendation of my LHBS. Made all kinds of mistakes - boil over, trouble getting from brew pot to fermenter, massive blowoff that ejected my airlock and made a nice mess of my floor, etc. Fermented for about 10 days, then bottled and let those sit for 12.

I know I'm supposed to be patient, but when I returned from vacation today I had to try one. Came out quite good, not quite as much flavor as i was hoping for, but really good taste and no disasters. Almost a cinnamon quality to it. My plan is to chill down only six at a time, leaving the rest to age a other 5 days before chilling to learn how the brew ages so i can find the sweet spot.

Already planning my next brew, any suggestions for a good second go round?I definately have the bug now!

hmmm... summer in FL calls for something light and refreshing. my favorite refreshing style is a dry irish stout. Low alcohol, smooth flavor without much bitterness. Call me crazy, but a Guinness draft (not the extra stout) is twice as refreshing as bud, miller, or coors anyday.

Welcome to HBT!
