newb yeast question for a SMaSH

I bought a few packs of Safale US-05 yeast about 2 months ago and was wondering if I can use it with a Pilsner LME to create a SMaSH ale. The last SMaSH I did shipped with Danstar American West Coast Yeast. Will changing the Yeast make a big enough difference in the overall taste of the SMaSH? I plan on using Citra Hops instead of Simcoe with this SMaSH.

I brew my SMaSH recipes with US-05 all the time, I am doing a Munich SMaSH tomorrow and will be pitching a top cropped 05

I am using US Hallertauer hops

at 64-65 degrees 05 is a very clean yeast

US05 is one of my go to yeasts if I'm not trying to replicate a geographic style. I used it in a citra IPA just last weekend, so yes it will work just fine.

I will be looking at a target fermentation temp of 68 degrees. One more quick question for you. My US-05 has been stored for about 3 months at room temp in my basement (between 55-65 degrees down there during winter). Is it still safe to use? Thanks for the quick replies!

if 68 is your wort temp good but if it is air temp not good, 05 at high temps is not as clean also 05 too cold can get a bit peachy tasting

if it was in its package you are good to go

I really like using 05 I use it in porters, stouts, ales and almost everything else :)

I save it and reuse it most of the time

I will be submerging my carboy in water inside a plastic tub which will keep a controlled temp at 68 degrees using a small aquarium heater like shown in the picture.

That should work out great for you I like 05 to start out cooler 64 - 65 for the first 48 - 72 hours then let it rise to 68 for the finish

but if 68 works for you then it's all good :)

almost all my brews are cold crashed and in the kegs in 10 or 12 days so I try real hard to avoid any off flavors

as I am not aging them out, just as a side note what is the OG of your SMaSH and IBU

most of the ones I do I have an OG 1.050 and an IBU of 25, it gives me a nice drinking beer

The Simcoe SMaSH had and OG of 1.045 and IBU of 45. Hop additions were .5oz at 60, .5oz at 15 and 1oz at 5 (1oz dry hop).

not sure what you are looking for but you may find your recipe to be very very hoppy

with they single malt you have nothing to balance the hops with

did you put your numbers in any brewing software ?

I have never used Simcoe so I have not first hand experience with how they taste

I do not think you will taste the Pilsner at all

it is your brew so you can do whatever you want :) enjoy

It's actually a pretty tasty beer and to me not very hoppy, but I'm a huge Pale Ale/IPA/DIPA fan. In my opinion the Simcoe hop has a very grape fruity flavor attributed to it. I opened my first bottle just after 5 days and it was fully carbonated.

my bad I just realized partial boil :) I looked at it as full boil all grain brew

with a partial boil and then topping off to 5.5 gallons you have an IBU of 31-32 which puts you in a better place
