Happy Veterans Day!

This is my first brew bellow. Calling it Hoppy Holiday IPA. Its at 7 days bottle conditioning at 70' , just tatsted on, and took some pics. Big Chinook flavor with a honey afternote, feel like I over carbonated. I used just under 4 oz desxtrose and after I racked to bottle bucket was at only 4 gallons. Not bad though, will it get more carbonated over next few weeks? I was scared I was going to pop a "gusher"but was very happy!

1.0 lb 2 Row Grain (pinch Crystal malt)
3.3 lb Liquid Extract (Sparkling Amber)
3.0 lb Dry Extract (Pilsen Light)
1.0 lb Brown Sugar
0.5 lb Corn Syrup
0.8 lb Organic Honey
4 oz Maltodextrin
4 oz Cascade Hops 60min
1 oz Chinook Hops every 10 min (5 oz Total)
1 oz Tettnang Hops 1 min
London111 yeast

OG 1.060

shooting for 1.075 area, could have been off though on temps when I took it and didnt mix too well when I added wort to carboy of water..... what do you think?

Extracts sometimes have cara-pils in them which, along with that little bit of maltodextrine, can create a monster head of foam like that. Are you giving them a couple days of fridge time before popping 'em open?
 
I fridged that one for only 24 hrs before drinking. I can be patient , just first time , curious to see it fully through.
 
It was pretty ok... Im going to have a few buddies taste this weekend. I felt like it was missing something the chinook flavor and aroma are good , could taste a light honey afternote followed by a lingering hop taste left on your taste buds. Im not sure though, missing maybe a matched maltyness to go with it. I almost felt it was watery. Well see next week, Im not disappointed at all.
 
Okay, these turned into gushers! im going to save the 4 22 oz ers and check em in a month. Ditching the rest....

Nooooo!!! Don't dump yet!!

Are they just over carb'ed? Or maybe just unevenly carbed (some overcarbed, others not?) if so, you can fix that.


If they have a gusher infection, then that might be a different story. Do you know whether they're infected? If so, do you know if they're ALL infected?
 
No not infected, over carbed ,its like popin a bottle of champaign! I havent dumped any, what do i do?


Not all are that way I poped four last night, 3 foamed over leavng an inch of beer left the other wasnt bad.
 
There's a bit of "extra" sugars in your recipe... and the honey dosn't that take longer to ferment? I gotta wonder if it was done fermenting? Man DO NOT dump itJonM is right. If it ainsick with some infection, don't dump it. HA! That brewborders on pornographic, what great head!
 
Yeah it taste sugary. Me and a pal just tried again and had no prob with carb. Still too carbed but not foam bombs. What do I do ? I had FG readings the same 3 days in a row. Although my airlock was still doing 1 bubble every minute.... Argh. Im going to brew Yoopers Stone Ruination clone this weekend. Will be much more on top of this one. I think this chinook recipe I found on google before I found this site just sucked. Im stoked for Yoopers though lots of good words !
 
Update, Poured one tonight. Still over carbed. Taste def came along , smells great. Poured, set in fridge and let it sit and decarb a bit. Pretty nice after about 10 min. Still dunno if ill brew it again but glad I didnt dump em all. (Made good gifts) This was the last 12oz bottle I had,I a have 6 22ozers still conditioning at 68'. Think these bigger bottle will be less carbed up?
