My name is Dustan Moore and I'm from Jackson, MS. This is my first time homebrewing. My first mead is currently in progress. I decided to go with an apple pear mead and currently on day 7 of the primary.

Do you have some beer styles you want to try?

Making mead us much easier but you learn many of the same procedures as beer
I don't drink much beer but I do like dark beer for both the bitterness?(I think that's what I'm going for) and the body/richness. I don't like IPA's though, at least the few that I've tried and I'm not exactly sure why.

Edit #1: I don't have a hydrometer but after about 1.5 weeks after my post, I racked it into a carboy, back sweetened a little, and stabilized it. It didn't taste bad, but I didn't stir it enough during fermentation plus with the apple, it put off a lot of hydrogen sulfide and needs to age off. I am going to bottle it regardless in about a week so I can start my next one. It did taste like a wine though so it'll only get better with age. I gotta buy a clarifying agent for it bc I want my wife to try it but she's not drinking it cloudy LOL

Are you saying you like bitterness in dark beers?

IPA beers are typically bitter from different types of hops and extra additions of them. Dark beers can also be hopped more but it almost sounds like you like the bitterness of darker type grains. That's two different types of bitterness found in beer.

For dark beers using dark grains that bitterness is more similar to the taste of dark chocolate. Different from hop bitterness.

Meads always improves with age. Additionally IMO the best clarifying agent is to simply cold crash it in a refrigerator. A month or more aging/cold crashing will definately result in a clearer smoother tasting mead.
 
It's been so long since I have had a dark beer so I can't exactly remember but I do remember liking the ones I've tried and I kinda know myself by now so it was something strong tasting that I enjoyed and definitely loved the body/mouth feel of it. I do love chocolate so maybe that was it 😂

Dark beers cover lots of styles and different flavor profiles. Stouts are different than a porter and different than Schwarzbier.

Perhaps you should try a few different commercial or craft examples to figuring what you like.
