Excited to be a new member. I line in North Texas. am starting out with intentions to brew a cactus prickly pear mead. Looking for advice on such. I have access to (“Tunas” in my back yard”). Questions

Boil or not boil honey?

Boil or not boil Tunas?

Best yeast to use? Hard to get Sherry yeast. “( but I can)..
