Hey guys, I've got to start with a quick thanks for all the information so far. I've been a lurker for a bit, and I've probably spent more time reading here than it should lately...that's not a bad thing, just an obsession.

I started about a month ago with a friend on a whim. Picked up a starter kit, made and made a porter - that's been in bottles 3 weeks now. It's been hit and miss with the carbonation but the ones that carbed have been delicious.

I jump into things completely or not at all...Well this is the completely type of thing. I picked up a converted fridge with two taps...a couple of corny kegs, CO2 tank, 3 more fermenters, more pots, buckets, carboys etc etc etc...needless to say my office at home is now full to the brim with homebrew supplies and I'm addicted.

I've got a nut brown that I just kegged last night, letting it force carb up right now. Brewed a Saison on sunday and it's sitting in fermentation right now. All of this has been extract. I have done a 1 gallon all-grain kit that was bottled last week so I'm hoping it turns out well - I'm dying to try it, but its got a bit more time before I crack a bottle.

Just converted a 10 gallon cooler to a mash tun and I'm frantically checking everywhere now to find the 5 gallon AG recipe to build. As much as I want to go all out and try to recreate KBS right off the bat I'm actually holding back and trying something a little less complex to start.

Thanks for reading.

Welcome from a fellow NC brewer! Sounds like you're already well on your way to brewing some awesome beer!

As for a first 5 gallon AG recipe, what are you thinking of going with?

Thanks for the warm welcome guys. I do think my buddy has gotten out pretty easy on everything; but I figure I'm not leaving the hobby anytime soon so why not just grab up what i need. The kegging was one of those happy craigslist moments when one brewer needed to get out... I wouldn't even want to say how cheaply I got everything.

Honestly I'm not sure - I'm reading through the DIY Dog book that brewdog put out, and recipes here as well. I'm not an IPA drinker; mostly a porter/stout guy, but we all know NC it's going to be a bit hot for those here soon.

I'm thinking a Wheat, Weisse or something like that but again not entirely sure yet.

Welcome from another NC'er. Where in NC? Also you said some beers didn't carb. Did you rack your beer on top of your priming sugar to mix evenly? If not this may be your issue. Just a thought.

I'm in Benson, at least address wise, I'm about 10 miles east of Garner off of I-40, so literally right down the road from ncsuwerewolf.

Also I poured the sugar mix into the bottling bucket first, the racked directly on top, letting it swirl around as it went.

We should get together and brew sometime. Benson is close to where I live (Garner). I've been brewing for a long time in years, but typically only do one or two batches a year. Sounds like you're already more advanced than me on the post-brew equipment side.

Cool, welcome to the insanity!

Three books, in preferred order of consumption: how to brew (palmer), designing great beers (daniels), and brewing classic styles (zainasheff).

Brewed extract for two batches, the. Went AG. 38 batches and two years hence and no regrets. Have used the heck out of those three books.

I'll pick those up, I've had them recommended a few times.

I'm about 50 minutes into the boil of my first AG, decided to do a strawberry wheat since there is a strawberry farm walking distance from my house. I'm pretty happy with how the cooler mash tun worked for me, and getting a much larger pot has made the fear of boil over a thing of the past.
