I'm confused on the fermentation process. I have prepared my wort using partial boil and began the fermentation process. My question is this: I have heard from some sources that you ferment for 7 days, others tell me 14? I'm confused. When I say ferment I mean in the bucket, not the bottles. Can anybody help me out here?

7-14 days is good, you can go up to 21 days no problem.

I like to wait until the gravity is steady for 3 days before transferring to secondary or keg/bottle/etc. This gives the yeast time to cleanup byproducts of fermentation such as diacetyl which can be an issue with some yeast strains.

Grab a copy of HowToBrew next time you are in Austin Homebrew and give it a read, and read all the sticky posts in the HBT forums... then before you know it you will be giving others advice. :mug:
 
As Saccharomyces 7-12 days is no problem, it can vary depending on where your wort is stored, the temps in that environment etc..

I recommend getting your hands on a copy of beer easy's video tutorials, they are online and take you through everything you need to know and some of the quirks that go with home brewing.. his page is here - http://www.howtobrew-beer.com/beereasy

If you didn't want to buy anything, there are loads of free resources around also, even a simple search on this forum should put you in good steed.
