I have an older one, before the tri clamp thermometer. I assume with the tri clamp, the probe goes into direct contact with the liquid inside? E.g. Liquid would come out of you didn't put clamp something on there.

My older one has like a welded thermowell tube instead . They're pretty awesome for fermenting in a repurposed keg fridge.
