Does the racking arm rotate?
Are those ball valves? Two on top and one on the racking arm?

I have an older one, before the tri clamp thermometer. I assume with the tri clamp, the probe goes into direct contact with the liquid inside? E.g. Liquid would come out of you didn't put clamp something on there.

My older one has like a welded thermowell tube instead . They're pretty awesome for fermenting in a repurposed keg fridge.

Exactly! You can either use the thermowell or thermometer.
