Yes I do not take OG or FG.. I was encouraged too.lots of time's.. I fermented in carboys, only primary, I can see when the fermentation is done and then I will wait for the beer to clear and wait..that is why carboys are the best . No I don't know what the FG was ending, if I wanted it stronger I will add more fermentable next timeSure they have made beer for hundreds of years without the tools we have now. But these tools have helped us understand what is going on with the beer and yeast, and ultimately led to brewing better beers.
I've been brewing longer, and still have my original Hydrometer. I like to know the OG and FG of every batch. I still learn a lot from these readings.
With the ease of using these tools, I can't understand why anyone wouldn't take a reading. Not talking about multiple readings, but an FG is so simple to take when bottling, and you can drink the sample for further research.
