Need some advice with recipe (red grape mead)

Hi guys, ive made a few batches so far and never bought a hydrometer, so i've never really known what % my mead is. Finally got off my ass and got one ;)

I can taste my previous batches have similar alcohol levels + i've pretty much stuck to using 7kg honey + 5gal water per batch.

However I would like this batch to have a higher alc % 16-18% (my others are prob around (9-11%). I have 5kg red grapes, 8kg honey, and 5gal water.

Any help would be appreciated.

edit: are there any tricks in fermentation or aging stages that will increase the alcohol level ? thnx
