My HB club is doing one of those things where we all meet at a local brewery and and take 5 gal. of plain ESB to ferment at home. I have some ideas but I would like to see what all of you think would be good.

1. What yeast would you use?
2. What hops to dry hop with?
3. What other things could I do?

I what the other people in my group to be like DAMN that's good.

Do a yeast starter so it will start fermenting quickly, how long after flameout do you plan to pitch??

I don't even know, The brewery is brewing up 2 barrels to be split up between all of us in the group. I will most likely pitch with in a few hours of flameout.

Liquid yeast, WLP002/1968ESB. Dry yeast, S-04. Pitch at 60-62*F, begin ferment at 64. Start bumping it up after it begins to slow. Finish at 69-70*F.

I don't dry hop my ESBs.

+1 BigFloyd. I never dry hop an ESB either.

Wyeast 1768 is an awesome ESB yeast though can be hard to find!
