Alright I'm in need of advice and help with some persimmons I just aquired. I got about 3-4lbs they are very bitter "american" ones usually for cookies. I would like recommdation recipes with apples.

Something in the 7%+ range, spices don't scare me either, also something semi-sweet tk sweet perfered. Looking to drink a little now and perhaps have some this time next year if possible. I'll be making a 5-6gal batch as well (separated into (3) 2gal batches due to the equipment I have on hand, upgrades coming soon though!)
 
old thread but the bitter/astringent ones, if you leave them on the tree for a very long time they get very soft and lose their bitterness. afaik
 
Anyone make persimmon cider? I have many trees that are ready at different months of the year. Both before frost and until december. Never pick them from the limb. Tickle the limb, if they fall they're ready. Soft like the back of your arm. Eat lots of 'em. I would love to make a cider or wine from some.
