Well yesterday we started a 1 gallon BOMM . I followed the recipe except did not heat the water and honey, I used safrew abbaye yeast (not sure on spelling sorry) my starting gravity was just a little over 1.100.

The BOMM does not heat anything and uses Wyeast 1388 - this specific yeast is key because it is very clean.

Safbrew Abbey does ok, but leaves some esters behind that resemble Chimay. Good or bad depending on what you want.
 
Oh the one recipe I seen called to heat the must... and for the yeast I didn't want to buy 5 gallons worth of yeast and waste it on one gallon. I guess I could have used the whole thing ? Plus I believe I was going to use a different yeast any ways for a sweet mead. I will find the recipe and the person who posted it and share it.

So it does say its a none heat. I am sorry about that. I also followed your recipe except for the yeast. Could I have used the whole Wyeast 3463 5 gallons worth on a 1 gallon ? Since I am new what do you mean by esters and Chimay?
 
Yes. It's the whole pack of Wyeast 1388 per gallons. Those packs are designed for 5 gallons of low gravity beer. High gravity mead (such as the BOMM) requires more soldier to ferment to completion.

Chimay is a Belgian beer known for it phenolic flavor profile. Those phenols are produced by the yeast. Abbaye make those type esters. Not unpleasant if you like those flavors, but some folks don't like it.
 
Oh okay, Next time I will try out the Wyeast 1388. So that means if I wanted to make a 5 gallon batch I would need x5 Wyeast 1388? Also today is day 3 and my gravity was at 1.060. Well we will see if I like it or not lol. Thank you for all of your help.
 
Well here is a picture of the first BOMM, it does still have a couple days till it is a month old. The taste is good, its not dry persay its not sweet either lol not really sure how to explain it. It almost has to distinct flavors, its odd. I do enjoy it though but I will try to use the right yeast the next time though and see how that compares.

What was your FG reading on it? I'm thinking about trying out the abbaye yeast myself..
