Hi!

I'm a new brewer from Norway, and have made a few extrakt kits for some months now.
I wanted to experiment a little with hops, so I bought a 15kg growler Briess golden light LME.

So far I have tried 12 liter batch with Willamette and US-05, 12 liter with East Kent Golding and WLP007 and a 22 liter batch with northern brewer and a new Norwegian yest called WLP6788 Norwegian farmhouse ale (norwegian info).
The WLP6788 was harvested by me from a batch with robust porter made after a home brewer day at a local micro brewery.

Now I'm wondering what to brew next. My inventory looks like this:

And some slurry from WLP6788.

Is there anyone out there that want to help me with a recipe I can try next? I have tried in a Norwegian forum with no luck. I have a 18 liter kettle with max boil volume at 16 liter. (sorry for the liters;) )

I should have mention that I'm not that found of IPA's and prefer beers with a bit less hops ;)

What volume would you use with that recipe?

You saw that the OP is doing 12 L batches, not 12 gal right? That's about 19 lbs of extract and 14 oz of finishing hops.

You're kind of limited with your choices of base there and it sounds like you've already made several pale ales (not sure what's in the Bitter LME but I assume it's a pale extract of some sort). Can you pick up some steeping grains like roasted barley or crystal to add some variety?

The canadian blonde kit is pretty ok as a basic honey-ale light ale type of thing.

Boil about 4 liters of water, with 1.5 kg of the golden light lme.
add about 15-30g of saaz for about 15 mins.
At flame out add a pot(500g) of good local honey.

add the coopers kit and put in the fermenter, top up with cold water to 23 liters.
add the kit yeast or a us-05 safale.

I was thinking something like a stout, porter, brown, or amber to get away from the pales. A lb of roasted barley is probably all you'd need to do a 19L batch of dry stout. If you decide what style folks can help with specific recipes.
 
the coopers bitter kit would be decent with a kg of dme or 1.5 of lme and about 200 ml of dark syrup, some willamette in a short boil or dryhopped.

I think I should try a dry stout. It been a lot of pale ales as you say.
Lme, roasted barley, east kent golding? Maybe some flaked barley?

Yes, a classic dry stout recipe would be an OG of about 1.045 (you would use golden or light extract), 1lb roasted barley and 2 lbs flaked barley per 5 gal, bittering to target about 35-40 IBU. I'm just not sure on steeping the flaked barley, it may just give you haze.

For a bit sweeter stout you could do something like this as steeping grains for 5 gal/19L, targeting a bit higher gravity than the dry stout:

.5 lb roasted barley
.75 lb chocolate
.5 lb Crystal 80
.5 lb victory
