Alright guys, I posted about this earlier... and I've deciding to go forward with it. Here's my quick-to-mature Holiday Mild(ish).

4# Light DME
1/2# Crystal 60
1/2 # Carapils
.75 oz Fuggles (boiling)
.75 oz Fuggles (flavor)
1 oz Celestial Seasonings Sugar Cookie tea

Yes, that last one is written correct. The tea consists of vanilla, orange peel and roasted barley. I got the idea of using this tea from Charlie P's "RoastAroma" beer recipe in JHB.

Let me know what you guys think. Think I should up the tea so it isn't taken over by the crystal?

Its just my opinion, and I am no one, but I would choose a different hop for your "flavor" hop. Fuggle is ok for bittering. :)

Bah! Fuggles is an excellent flavor/aroma hops variety, used in countless commercial beers. I wouldn't waste it on bittering! You're entitled to your opinion, Chris Knight, even when it's wrong. ;)

You do raise a good point, though inadvertently. If you're going to use the tea, Gin, consider omitting the flavor addition. The flavors will clash. Fuggles are very earthy, pungent and vegetal. Those flavors do not blend well with citrus.

I like the tea idea, BTW. That's thinking outside the box! :mug:

I thought Orphy's mild uses fuggles at 45 and 15. Isnt the hop presence real low anyway.?

The tea itself has a barely detectable citrus component. It's much more... "creamy" tasting rather than "sharp". That said, would fuggles go with this creamy vanilla-ness?

I really think you should put the spotlight on the spice flavors, not hops. If you're after the flavor contribution of the tea, adding flavoring hops throws an immediate (and in the amount listed, insurmountable) roadblock.

Let the spices shine.

Bob

NQ3X - good point. I think I might just throw in an ounce of fuggles for bittering.

How much tea? Use an ounce. If it needs more, make a pot of tea post-ferment and add it.
