Did this ever happen to someone, my Hefe tastes water with a hint of banana from warmer summer fermenting...

I think the northern brewer recipie from beersmith database was making me mash too low... 146f for 75 mins...

What can I do to improve taste ??
 
Is it carbed? Carbonation improves hefes dramatically. 146 is really low though, usually hefes are 152-154. What was your FG?
 
At that low a mash temperature, there won't be many unfermentable sugars. That means little or no mouthfeel. Which yeast did you use?
 
Og 1.043 beersmith said 1.046 and FG is SPOT on at 1.011 as beersmith said !! Wyeast 3068
 
I used wlp300 with a mash of 151 FG at 1.050 and final at 1.008

threw a splash of munich and tripple decocted. a little thin for me but all 10 gallons went quick so I was on the right track. I will bump up my mash to 153 next time
