Was playing around in beer smith and came up and brewed this recipe. Let me know what you guys think. It's in the primary right now and the smells are amazing.

1lb Maris Otter
6oz Crystal 60
12lbs Briess light liquid malt (9lbs late addition.)
U.S-05 yeast rehydrated
1lb white beet sugar
Hop schedule
60- 1oz warrior
30- 1oz mosaic
1oz Amarillo
15- 1oz mosaic
1oz Amarillo
Flameout
2 oz mosaic
1 oz Amarillo

Dry hop
Considering
Simcoe
Citra
Amarillo and
Mosaic

This comes in at 115+ IBU's and 9.5% ABV.

I'm hoping the sugar will dry it out and let the hops shine through.

Anyway critiques?

Based on this, I'm getting 1.095 OG and 1.017 FG, at best... 1.020 is more likely. I do not recommend this plan for a dry American IIPA.

Also, you have to mash the Maris Otter so it is technically not an Extract recipe. If you lazily steep it with no concern for time, temp, and water to grist ratio, then you will likely have some residual starches left in your beer.


Here is what I would have done while staying as similar as possible to your initial plan:

6.5 gallon boil / 5 gallon batch
1.078 / 1.014
8.34% abv

1 lb Maris Otter, mashed
6 oz Crystal 60, steeped
9 lbs Briess light liquid malt (4 lbs late addition)
0.75 lb white beet sugar (flameout)

60 min - 1 oz warrior

10 min - 2 oz mosaic

Post-Boil Hopstand
3.5 oz. hops of your choice (any you mentioned will work)

Dry hop (split into two, 5 day increments)
5.5 oz. hops of your choice (any you mentioned will work)
