This is my first recipe I have done on my own. It is meant to sort of mimic a Blue Moon. This is one of my wife's favorites. I brewed last night and the airlock was bubbling away when I left for work this morning. Do you think I will end up with what I had planned? I would love to read your comments. Anything you would have done differently?

Beer:patti's Witbier Style: Belgian White (Wit)
Type: Extract w/grain Size: 5 gallons
Color: 5 HCU (~4 SRM)
Bitterness: 12 IBU
OG: 1.053 FG: 1.008
Alcohol: 5.8% v/v (4.5% w/w)
Grain: 2.0 lb. Raw wheat
Steep: Steep the grains at 155°F for 45 minutes in 1 gallon of water. After steeping wash the grain bag with 1 gallon of 170°F water making the volume in the brew pot 2 gallons.
Boil: 60 minutes SG 1.132 2 gallons
2.0 lb. Light dry malt extract
3.3 lb. Wheat extract
Add bitter orange peel to the boil with 15 minutes remaining. Add 1 Tsp. of coriander when the boil is completed.
Hops: 1.0 oz. Hallertauer (4.25% AA, 60 min.)
1.0 oz. Saaz (3.75% AA, 20 min.)
Yeast: Safbrew 06 - Wheat
Log: Brew date 8/2/11
Carbonation: 2.4 volumes Keg: 12.2 psi @ 42°F
 
FYI - Raw wheat needs to be mashed with 2-row. On its own it doesn't have any enzymes to convert. Steeping it will just add a bunch of starch to your beer.
 
OK...so what will it do to the final product?

It'll be cloudy (a good thing), but also could affect the flavor --- making it a bit starchy. Also, if your sanitation isn't top notch, there are a lot of critters out there that like starch and could spoil the beer. Basically instead of getting fermentable sugar from the wheat, you're only gonna get starch.
 
It will have this effect even though I also have 3.3lbs of wheat LME and 2lbs of light DME?
