Ok like everyone else that doesn't know about the sorghum twang I brewed the recipe provided by the local brew supply

3lb briess sorghum syrup
1lb rice syrup solids
1oz Liberty hops 50min
1oz Liberty 10 min
Safale US-05 yeast

End result is after 5 weeks in the bottle it didn't carbonate very much, there is very little head retention, it is also cloudy. The twang is very pronounced.

My next batch will hopefully have no sorghum in it at all but if it does it will be less than half of the fermentables. Will also use more hops.

My daughter the GF person I'm brewing for said it tastes similar to Red Bridge but before going GF her favorite beers were darker such as pale ales or IPAs
 
I like getting some quinoa, amaranth, and millet. I rinse them and soak then in water for a bit, then toast then for a long time in low heat. In my opinion, it gives the beer body and a malty flavor without the sorghum twang. I still use sorghum extract, but in a much smaller dose, and I use some sugar to lighten it and dry out the flavor.

But I'm still relatively new to GF brewing. The folks in this forum can probably give much better advice for making a proper IPA.

Add more sugar to reduce the residual sweetness from the sorghum.

And always use 1 teaspoon of yeast nutrient. (Ensures quick fermentation).

Also what temperature were your bottles carbonating at? And how much did you add to the bottles for carbonation?

FYI: I find us-05 very slow to carbonate in the winter here.
 
I used 3/4 cup priming sugar and conditioned at 70 deg

I do plan to do some steeping of some grains for flavor, matter of fact I already have some GF oats, an when I get back home from vacation I have a source for some buckwheat I thought I would try that.
 
Buckwheat is very nice for it. It can have a really nutty taste if used in high amounts, but that's not necessarily a bad thing.
