.
Safbrew wb-06 yeast

Strike water 156 for 60 min
Mash out 168 for 10 min

Est post boil gravity - 1.069

How's this sound?

It looks like a lot of wheat malt for a one gallon batch, but it should make for a very velvety mouth feel. I've never used BIAB, so other, more experienced, posters will be along shortly.

I've gotta say that I'm impressed that your first batch isn't a kit. Drive forward and conquer!

Yeah I'd rather get in and go with the best, yeah my estimated SG is .16ish too high but I rather have a slightly higher gravity beer... So I think the grain is a little high I did a conversion from an all grain that looked great, and I rounded the grain bill up to make things easier for my self maybe no the best idea but just gotta wait and see I and in te middle of mashin out right now... Ready to get my boil on!!!

It smells and looks like a hefeweizen / wheat beer an still got 40 min left so excited... Just chillin drinkin a homebrew cider and waiting best hobby ever making hooch!

How'd your wart taste? One of my favorite parts of brewing is sneaking some wart into a glass when the Beer Gods aren't looking ;)

It went pretty smooth, missed my SG by a bit but it was gonna be a good bit outside of the standard range so I missed it by enough to put it right in the middle... Post boil SG was 1.044 and beersmith gave me large pre boil water quantity and it didn't boil down as much as I hoped but it gave me about a gallon and a half. The wart was sweet and delicious. It's fermenting away though, so just gotta wait about 3 weeks? I think sound about right?

3 weeks is perfect. Heavier beers (aka, higher gravity beers) take longer, but your hefeweizon will be happy for 3 weeks. What temperature are you fermenting at?

Around 70 which I know is too high but I it's the coolest room in the house and it's still high 80s... I know ideal temp is 67, but as I'm new to this beer brewing hobby I don't have a temp controlled fermentation chamber.... Yet

I'm in the same boat, and I've still managed to make a beer or two that I would consider very good. Brew on!

For 1 gallon brewing you can just get a cheap DIY bucket for a buck or two, put your demijohn in it and fill it with cool water (Then put a cardboard box around it to for further insulation/sunlight protection). I did this and also got a cheap aquarium heater for the winter to keep it at the right warm temperature when it gets a bit cooler.
