So I popped open the fermenter and used a baster to draw out a sample of this beer yesterday, and it was absolutely delicious. This was a recipe that I pretty much came up with myself, I looked at a couple of internet recipes and then used Beersmith to sort of adapt them into my recipe. I'm happy enough with it that I thought I should share my happiness here, since you guys have been so helpful. Can't wait to bottle this next weekend!

Here's the recipe I used:

Ingredients

3.50 lb Wheat Liquid Extract (8.0 SRM) Extract 46.67 %
3.00 lb Amber Liquid Extract (12.5 SRM) Extract 40.00 %
0.75 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain 10.00 %
0.25 lb Chocolate Malt (350.0 SRM) Grain 3.33 %
1.25 oz Crystal [3.50 %] (60 min) Hops 13.6 IBU
1 Pkgs Bavarian Wheat (Wyeast Labs #3638) Yeast-Wheat

Very simple but apparently effective.
 
i ordered the bavarian dunkelweizen from AHS. it's a very similar recipe.

i'm really excited to try it.
 
I recently brewed a weizenbock with Wyeast 3638 and I'm very pleased with the results. Great yeast!
 
Yeah it was the aroma from the yeast that really made it for me. Goatey, I don't know what kind of kit that is but if it's one of those "can and a pack of yeast" type kits (and it doesn't sound like it is) try the 3638 or a similar yeast with it instead.

Ludovico: Double Hopped Weizenbock? How is that? I've wondered how this beer would taste with just a little more hop aroma, but I didn't add any finishing hops since I wanted to do this mostly to style so I'd have a baseline for playing with it in the future. I wonder if having some hop smell would blend well with the fruity/clovey/bubblegum aroma from the yeast.
