Ok so here's what happened I made this recipe and somehow my stabilizing didn't hold so I got bottle fountains and a few bottle bombs. This lead to having a "drink the cider" party.

The moral of the story is this sweetish carbed wonderment was by far the most well-received brew I've ever made. Which brings me to my evil plot...

1) Make cider according to this recipe:

2) Skip stabilizing, let it bottle-carb, and then pasteurize it using this process:

3) Enjoy.

Now my question is, how quickly will it reach a good level of carbonation? Should I check daily? hourly? I want to time it so I can bottle it on a weeknight and pasteurize on a Saturday so I'll have the time. I've never purposfully carbonated any of my wine/ciders so any feedback would be great! :cross:
 
It really depends on how active the fermentation is and how sweet it is when you crash it. I have had it take a week, and I have had it be over carbonated in two days. Get a plastic soda bottle and fill it, feeling how firm it gets. When it feels right, crack one open and check.
