in 2018 i found a store going out of business and snagged 12 lbs of buckwheat honey for 20$. after i made the mead i found out that bukwheat honey often gives a barnyard flavor. newsflash - it does. this was not a stepped addition mead i think BOMM was just getting popular around then. so stepped addition was new to me ande it scared me.

i shelved it thinking it might one day be good. every 6 months or so i tasted it and althoug it did get a little better i basically gave up on it in 2021.

going through cabinets this AM i found a december 2018 bottle in the back. it had great clarity and thought maybe its palatable. but i doubted it.

its amazing

so smooth. boozy but not hot at all. delicious notes of fruit . no tartness or cat pi$$ taste at all.

loving it . now i wish i had more.

buckwheat mead can be done it just takes a really long time.
