Stopped by my nearest brew shop today ...took along the True Brew Oktoberfest kit that a friend had purchased and asked the owner of the store to help modify it for something that is more inline with my likes....so after adding 2lbs of roasted grains and chocolate malt adding some different hops and DME and upgrading the yeast to US-205 the brew was completed yesterday and the airlock is hard at work!!!! here is a breakdown

60 minute boil
5 gallon batch size
2.5 gall boil
grains steeped @ 160 degrees for 20 minutes

grains:

Specialty mix from store (3 separate grains and malts) 2lbs
lovibond crushed grain from kit 8oz

LME:

Muntons Malt Extract (amber) from kit 3.3lbs

DME:

Muntons (light) from kit 2lbs
Briess Sparkling Amber (added) 1lbs

Hops:

Liberty from kit 1oz 60 min
Falcons Flight added 1oz 60 min
Liberty from kit .5oz 15 min
Falcons Flight added .5oz 15 min
Liberty from kit .5oz will add at 2nd Ferm
Falcons Flight added .5oz will add at 2nd ferm

Yeast:

US-205 pitched dry at 78 degrees


OG 1.060 hydrometer @ 60 degrees (sample cooled in refrigerator)
FG ??????
ABV ??????


and now the wait begins!!!!!! will let this ferment for the next 15 days or so ...gotta free up the carboy by bottling the Imperial Stout thats in it now.
