First of all, I have some Paulaner Premium Lager trying to assure myself that I want to make 2 gallons of this stuff. What is crazy is that after the first taste, I feel like I am drinking Bud Light but with each subsequent taste it gets a little sweeter. So I'm in.

I know that the recipe is mostly pils and munich malt in some combination but I would like to slightly accentuate the malt sweetness and create a monster creamy white head on this lager. I was thinking of using some Carafoam or Carapils less than 10%. Is this too high? Any other thoughts on malts or mash temp for head and sweetness? I have not had much success with head retention but know about rinsing my glasses prior to pouring.
