I brewed my first batch and now looking to try something a bit more challenging. Has anyone brewed a Christmas ale with mulling spices?

Lots of them are spiced christmas ales. For the most part many of them a combination of cinnamon, allspice, nutmeg, cloves, vanilla bean, orange peel etc etc. You'll have to decide which of these you're including as being a mulling spice, pre-made blends that you buy at the store can vary in which spices are being used as well as proportions of those spices used. You'll have to decide what you want to use and tailor it to your needs/wants. I would avoid going with any pre-made mulling spice though because you have no control over proportions unless you go through and pick things out.

I have some mulling spices I was thinking of putting in a holiday hard cider. But I suppose they could go well in a nice porter or stout.

I brew a Christmas Ale that's essentially a Scottish ale with the mulling spices added in lieu of the last hop additions. Northern Brewer has a great recipe kit on which that's based.

Anybody have suggestions on amounts of spices? I want them to be noticeable but not exactly the focal point of the beer. Think 4 out of 10 on spice strength...

I use half an ounce for 5 gallons and that gives a pretty balanced flavour. I think that an ounce of spices would make them a little too forward.

::edit:: I use these spices in the whirlpool. When you add is going to make a big difference.
