Moved with SCOBY. Did not brew new batch right?

We moved and I put my SCOBY in a glass airtight container with some of the liquid. It was in there for 2 days before I got my continuous brewer set up again. The SCOBY is HUGE, but it sank to the bottom. A new SCOBY grew on the top of the sweet tea and I left it for 2 weeks. I drew some off this morning to see how it tasted, and it seems it did not ferment. Still tastes like sweet tea with just the ever so slightest kombucha taste and fizziness. There is absolutely no mold or anything else wrong with the SCOBYs. Both look healthy and like they should. I only retained maybe a cup of kombucha liquid with the SCOBY when we moves and replaced all the rest with fresh sweet tea.

I am wondering if I maybe did not leave it for long enough or if I'm going to have to start this whole process over again? Any ideas or suggestions?

Wanted to add: Before moving, I was able to draw off 6 mason jars a week of fully fermented kombucha from this system which is why I'm a bit perplexed as to why it didn't ferment fully.
