For my first brew I made the Smooth Nut Brown kit from Midwestsupplies. I thought this kit was excellent, but I am interested in making some changes.

Here is the original recipe:
6lb Amber Liquid Malt Extract
1lb Dark Brown Sugar

Specialty grains:
12 oz Carapils
4 oz. Chocolate

Hops:
1 oz. Willamette for 60min
1 oz. Fuggle 2min

I want to increase the maltiness a give it a little more head retention. I am thinking about cutting out the brown sugar and adding another pound of liquid malt extract and 8oz of molasses. What can I add to increase the head retention? Should I increase the hops to keep it balanced with the increase in malt? Any help and suggestions would be great.

Thanks

the carapils will aid in head retention.

But, if you switch your carapils to something like Crystal 80L, you'll also maintain the head retention of cara, and boost your maltiness and body.
