Would you do it? I did a hefeweizen kit last year with WB06 and it was great. I did an ale kit for Christmas with T-58 and it had a hefeweizen like flavor. Actually was very similar to the Victory brew Merry Monkey. I have a recipe that is estimating 1.061 OG. I want to add enough yeast assuming I hit this. I don't do starters and only use dry. Just so happens I have one sachet of each yeast. So my mind started wondering...to this post.

Good idea or a ruined batch?

The recipe for now, 5 gal batch. I built part of it searching for recipes that included T-58 and started the mod process. I like whole numbers to start is why there are no "oz" measurements.
4# Pilsen
3# White Wheat
3# Flaked Wheat
1# Flaked Oats
 
I'd just pick one and let it go. I've never had fermentation fail to start nor had one finish high from a single packet. Of course, I never have a starting gravity over 1.075.
 
I guess I was thinking about what I heard when doing a lager at 1.060+. I have just gotten into the habit of using 2 packs since a lot of my ales are high gravity. Thanks for getting my mind to think a bit!

For lagers at low temperature I'd use three or four packs at that OG depending on the strain. I'd probably go for two packs at this OG for an ale, but you could get it done with one. It moreso depends on how much yeast there is in a packet anyway. BRY-97 for example contains less viable cells compared to say US-05. For the former I'd use at least two packs for a 1.045-1.050 beer as well, but not with the latter. Consult a calculator if you want to be sure.
