If I happen to miss my starting gravity, what can I do to correct it if it is too high? too low? (By this i mean if the numbers are way off). What is an acceptible amount to be off in your opinions?

If too low, can I just add Dried Malt extract? What if it is too high? Do I just add water?

This is just something I have not found the answer to, so if anyone could shed some light it would be a big help.
 
You are on the right track. It is best if you can calculate (or use software) your expected gravity at the beginning of your boil. That would be the best time to correct.

To increase gravity, you can either boil longer (for a few points) by boiling down to your expected starting gravity, then stating your boil timer. Or, you can add water to lower the gravity to expected.
 
Not to hijack the thread, but I've read somewhere about adding Maple Syrup to add gravity?

Would anyone recommend this?
 
I dont know about maple syrup but honey is 100% fermentable, so maple syrup like real maple syrup might be. I dont know for sure lets get a better answere. Im intrested in this as well.
 
If I was low, I'd add more malt extract before I'd add honey or sugar. I guess it probably depends on how much we're talking about adding here, as a lot of honey or sugar would really change the final product, but so would too much DME if it threw the other stuff way out of balance.

I'd probably boil down or add water as has already been suggested.
