hello,
A couple of years ago I ran into a recipe for a Mirepoix (onion, celery, and carrot) cooking wine. My garden is very abundent in these areas this year and I wanted to give it a try. But of coarse I can't find the recipe again, I think it may have been the book "Wild Fermentation" but I am not sure.
Does anyone have a good recipe for this?

Couple routes you could go. Either make 3 1 gallon batches (one of each) and then blend til you like the flavor of it. Or just make your mirepoix and go from there. I'd say about 3-4 lbs of veggies per gallon. I'd also add some chopped raisins into the primary to help with nutrients and body. I'd check out Jack Kellers website (http://winemaking.jackkeller.net/request.asp) while you're at it. He has a bunch of country wine recipes on there. Probably has an actual recipe for the carrot, onion, and celery wines.
