My 1st Brew: Mindless Mayhem 69 Imperial Crimson Ale! Predictions?

Howdy Brewers! A very hearty thanks to all the folks on these forums whose insights proved so valuable (hopefully) in the orchestration of my first day of brewing. And thanks to my long-time brewer buddy Rich, whose guidance ("Whoa- you need to MEASURE that!") tempered my freewheeling tendencies.

After a couple months of research and acquisition, I scheduled the Big Day to coincide with the anniversary brunch of the brewers of my favorite beer- Intuition I-10 IPA. After meeting the brewers and sampling a dozen anniversary variations- special props to the Blueberry Jon Boat & Smoke IPA w/ Pineapple & thanks to the Avondale Mellow Mushroom- it was home to brew!

Needless to say, a high-gravity tasting and a couple of sixes of I-10 and Dogfish 60 did wonders for the exuberance of the embryonic Brewmaster but didn't help much with meticulous execution. Consequently, the hydrometer never made it out of the package and some of the hop additions were slightly guesstimated.

But my prep was comprehensive- from "How to Brew" to tips from Steele and many others, including so many on these forums. As an old chef with decades of obsession with flavor layering and an insatiable thirst for complex, hoppy ales, I decided to savor the entire process from recipe construction through growling. The result is Mindless Mayhem 69 Imperial Crimson Ale.

Everything after Brew Day went smoothly with fermentation beginning within 12 hours and progressing steadily- a bubble every 1/2 second for 3-4 days. Aroma, color and clarity seem optimal as I prepare for transfer to growlers today- but with no hydrometer readings...

Anybody care to guess what I've got? :)

Batch Size: 6g > 5.75g post boil > 5.5g in F1 > 5.25g in F2 > 5g+ -> Growlers

FERMENTABLES:
Steeping Grains: 0.75 lb Crystal 60L; 0.5 lb Crystal 10L; 0.5 lb Maris Otter; 0.25 lb CaraRed
Steep Schedule: 2 lbs for 45 min in 2.69 quarts @ 155/Re-steep for 5 min until FO:
Extract: 8lb LME - NB IPA Malt Blend (US 2-row, Maris Otter & Light Cara)
Extract Schedule: 69m-4lb, 15m-2lb, 5m-2lb
H2O: 6.69 gallons spring water

HOPS:
Hops: 15 oz: Chinook (AA 13) - 1.5 oz, Galena (AA 13) - .5 oz, Glacier- 1 oz, Citra (AA 11) - 3.5 oz, Amarillo (AA 8) - 3.5 oz, Mosaic (AA 12)- 5 oz

BITTERING SCHEDULE:
Bittering: 69 Min: 0.5 oz - Chinook, 0.5 oz - Galena
Secondary Bittering Layer: 39 Min: 0.25 oz - Citra - 0.25 oz - Amarillo , 0.25 oz - Mosaic

FLAVORING SCHEDULE:
15 min: 0.5 oz - Citra, 0.5 oz - Amarillo, 0.5 oz - Mosaic
9 min: 0.5 oz - Citra, 0.5 oz - Amarillo, 0.5 oz - Mosaic / 1 Whirlfloc, 1 Meyers lemon zest
5 min: 0.5 oz - Citra, 0.5 oz - Amarillo, 0.5 oz - Mosaic / 1 Meyers lemon zest
FO: 0.5 oz - Citra, 0.5 oz - Amarillo, 0.5 oz - Mosaic / 1 Meyers lemon zest

FERMANTING/DH/AROMA SCHEDULE:

CONDITIONING SCHEDULE:
1 Cup Orange Blossom Honey

PROCESS:
1: 45 minute steep w/ 2lbs grain mix
2: 69 minute boil with above schedule
3: 45 min Hop Whirlpool/Stand to 169°
4: Chill to 66° degrees
5: Pitched 1.69 Safale 05
6: Aerated twice for 30 seconds over 4 hours
6: DH/Ferment for 30 days @ 66.9°
7: Rack to F2 & DH/Ferment for two weeks
8: Cold Crash @ 39°
9: Condition with Honey & Rack to Growlers.

Thanks Brewers- putting together a guide of the advice here proved invaluable. The look on my buddy's face was PRICELESS!

His convoluted expression after tasting from the auto-siphon tube made me think it tasted like gasoline. Turns out, his shocked reaction was that it came out exactly as hoped- kind of a cross between I-10 & Dogfish 60...

So we poured a pint & the stuff already had a head and the aroma/taste was hard to believe.
