I'm fixing to start this next weekend and want to add some vanilla. And I'm thinking add to taste when it goes to the secondary. Any thoughts on this plan? A better time to add (bottling / kegging or during boil?Amount? Brand?
 
Add at bottling time and don't do a secondary unless you're dry hopping or racking onto fruit or something like that. If I'm not using real vanilla bean, I like Watkins real vanilla extract. Dose using an oral syringe and only add a tiny bit at a time. I used 2 teaspoons in a 5 gallon batch of peppermint chocolate stout a while back to help bring out the chocolate notes.
