I just bottled my first AG batch possibly too early.
It's an AG, 60/40 Wheat that started at 1.052 (mash temp too low). I checked it before bottling and it seemed like it stopped at 1.020. No bubbles, no change in gravity for a few days. Thinking it just didn't completely attenuate, it looked like it was done.
So I proceeded to bottled it using Fizz Drops, BB crowns, and Hoegarden bottles.
I just looked at a bottle behind some light and I see a decent amount of bubble activity. I haven't seen this before, not that I've ever checked that closely.
Should I:
-expect some exploding bottle bombs?
-expect them to be over carbonated?
-cool them down to slow any activity after a few days?
-just roll with it and hope for the best?
