My BYO Clones issue is at home, and I can't remember what that Pliny clone looks like. Someone help me out. I need to know if I have all the stuff. Hops I can sub in whatever and still make good beer, but malts, I dunno. I'm thinking about brewing some up tonight, but I'd like to know what I'm getting into before I go home. Anyone have the BYO clones recipe handy?

6 Gallons

Grain Bill
12 lbs. - 2 Row Pale Malt (American)
1 lb. - Corn Sugar
1/3 lb. - Crystal Malt (45L)
1 lb. - CaraPils Malt

Hop Schedule
1.5 oz - Chinook (First Wort or Mash Hop)
2.75 oz - Warrior (90 Min.)
.5 oz - Chinook (90 Min.)
1 oz - Simcoe (45 Min.)
1 oz - Columbus (30 Min.)
2.25 oz - Centennial (Flameout)
1 oz - Simcoe (Flameout)
3.25 oz - Columbus (Dry Hop)
1.75 oz - Centennial (Dry Hop)
1.75 oz - Simcoe (Dry Hop)

Yeast
White Labs California Ale Yeast (WLP001) - 1800 ml starter

Mash/Sparge/Boil
Mash at 150° to 152° for 60 min.
Sparge as usual
Boil for 90 minutes (remember to compensate your water if you normally do 60 min boils)
Cool and ferment at 66° to 68°

I know someone who owns a homebrew store and he's convinced that additions between 30-15 minutes are useless. I'd probably agree...

So anyway, I didn't end up brewing last night. In fact, I'm not so sure that, given the state of things, brewing a beer that uses 10+ ounces of hops is the brightest of ideas. I need my stash to last me awhile, and even with 8+ pounds, I still don't know if I can justify it.

I couldn't decide, and before I knew it, it was 6pm and I hadn't even milled any grain or gotten any water together. So I think I'm gonna brew something on Thursday instead. Not sure what yet, but I'm scheming on an IPA. Might go with a bunch of Munich malt as my base, and toss a touch of peated malt in therejust because I can. Not sure yet though. I might actually just go with a traditional recipe. I've got Designing Great Beers here at work, so I might thumb through today and see if anything strikes me.

Pfffffffft.... sissy. :D :p
 
Evan, make an IIPA. I just did an IIPA that used around 8 ounces of hops... you just gotta do it, it could be the last time for a while. Like you, I still havea little over 8lbs left and probably won't do it again. But it's going to be worth it.

Maybe.

That, and I have virtually none of the hops they call for. I've got maybe a couple ounces of simcoe, half an ounce of chinook pellets, and a couple ounces of columbus. The rest I'd have to sub in Galena and Cascade. Honestly, I don't know if it would still be the Real Pliny if I subbed that much. I'll probably brew it after the new year sometime, and order the hops that the recipe calls for---if I can find them.

I like that idea. I did that double IPA, and it turned out okay. It's very heavy-handed...probably because I used some laaglander DME that was less than entirely fermentable. It surely didn't measure up to the first batch I did. So, yeah, I was also looking at the Ruination recipe in the BYO Clones last night too. I'd still have to sub in hops because I don't have magnum, but that's ok.

Without Warrior or Centennial or enough Chinook? Probably not. I messed with promash a bunch last night just trying to sub in Galena and Cascade where I could, and it got to the point where I could tell it was no longer Pliny. I mean, you remember the thing with Sam Adams longshot, right? The guy would rather them not brew it at all than brew it with different hops. If I'm gonna toss 10+ oz of hops into a batch, I'm gonna make sure it's done right. And I just really don't think that Galena and Cascade are gonna make up for the lack of warrior and centennial and magnum.

Yeah you should be fine. It's a good thing you don't whirlpool either. I did that by mistake at first and collected about 3 gallons of wort, so I ended up having to strain it all to get to the right volume. I think the breweries use pellet hops when doing recipes with so many hops.
 
Well don't make pliny, but use what ya got. Mine was all simcoe and chinook, but if you like cascade you could use it for a lot as well. I have to say, had a fresh lb of chinook and a fresh lb of simcoe when I did mine, so it didn't hurt my stash too bad.

What do you have a lot of?
 
Tons of:

Galena (27oz)
Willamette (28oz)
Cascade (35oz)

Moderate amounts of:

EKG (11.5oz)
Northern Brewer (8oz)
 
I don't know much about galena, is it a good one for ipa's? I have 3 ounces of it in my freezer to try on a batch sometime.

Again, if you are a fan of cascade, you could use a lot of it and a little of some other guys. Maybe a dry hop with simcoe?
 
Man...screw it, I'm brewing an Imperial IPA. High OG, low FG, insane IBU. Most likely modeled after Ruination, but with some victory in the bill. I'll craft a recipe and post it for review here. I'm looking for tons of hop flavor and aroma.
 
Yeah, Galena is a great base bittering hop for pretty much any beer...at least, that's what the description says in Promash.
 
Yeah, man, I love love LOVE victory in my IPA's.

Anyway, check it out, let me know what you think. This is still a monster. What I'm most interested in is the flavor and aroma hop additions. Any and all help is GREATLY appreciated, because I want a hop bomb...not just bitterness, but taste and smell too. Hardcore! Also, am I wasting hops by going above 100 IBU's? I know that supposedly we can't detect anything over 100, but...then why is Pliny at like 250+?
