I don't have adequate refrigeration for lager temps but I see that California common uses a lager yeast that will work in the 65-68f range. Has anyone tried substituting these yeasts for say a bock or maibock? Or even an ale yeast?
 
I've used the California Lager yeast a couple times. Wyeast 2112. Temps around 64-65
I've always used some steeping grains such as victory toasted and crystal 60 and about 6lbs of Malt, either liquid of malt and some hops.
So to answer your question, yes you can use it with any types of grains, extract and hops and experiment with it.
But with this type of yeast and or lagering, you want to go 3weeks min. in your primary fermentor and then 4 weeks min. in your secondary.
Turns out good beer this way.
