Here's a recipe I came up with using Sun King Wee Mac, but I'm sure it would work with most any scottish ale.

Mexican Meatballs
-------------------------
2 lbs ground beef
2 lbs grouund pork
1 cup breadcrumbs, divided
1.5 tsp chipotle powder
1/4 cup chili powder
2 tsp salt
2 tsp cumin
1/4 cup oregano (mexican oregano if you have it)
1 tbsp garlic powser
2 Whole eggs

preheat oven to 400
combine all ingredients reserving 1/2 cup of the breadcrumbs
portion meat at 1.5 oz each and roll.
roll in reserved breadcrumbs and bake for 20 minutes or until golden.


Wee Mac Molé
-------------------------
8 cups Wee Mac scottish ale
1 cup light brown sugar
1 tsp powdered chipotle
1 tsp all spice
1/2 tsp cinnamon
1/2 cup apple cider vinegar
1/2 cup tomato paste
1 oz unsweetened chocolate (chopped)
2 Tbsp butter
3 Tbsp cornstarch

Combine all ingredients except chocolate, butter and cornstarch.
Bring to a boil. Add chocolate and stir until melted and blended.
Boil until reduced by half, stirring fairly regularly.
Add butter and stir until mixed well.
Mix cornstarch with enough hot water to disolve. Add cornstarch a little at a time until the sauce reaches the desired consistency. You may not need all the cornstarch, or you might need to add some more.

Add Meatballs and sauce to a crockpot and keep warm. Serve with crumbled queso fresco and chopped cilantro.
