I'd say something nice and hoppy to cut the grease. Maybe and ESB or American Red?

I'll agree with Laurel's suggestion.
 
I would have a basic Pale ALe on hand for my guests who will need somethign to quaff with all that salt; and probably a stout, like an export stout, something with some raisin and complexity to go with for the real trenchermen at the table.

And water, pitchers and pitchers of water.

Looks good, I have a cousing graduating college next month...
