I brewed 5 gallons of mead in my closet about 5 months ago. It was my first time, and during the middle of the semester. I've since moved, and the mead has been left sitting in a closet at my parents house for 5 months. All it had was water, honey, orange and yeast.

I want to bottle everything up now, add some spices and let it age more. Is it going to turn out horrible? Or worse yet, tainted with methanol? How will I know?
 
Should be just fine. I let a lot of my condition for several months, as well. And I've know others who will bulk age them in a fermenter for several years. Never tried that myself, but the ones I've tasted have been outstanding.
