When I've been in Maui, I have really enjoyed Maui Brewing Company's Mosaic Mo' Betta DIPA. Unfortunately, they don't ship this brew to the mainland (well, they did once, according to their distribution manager), so I'd like to try to recreate it. The spec sheet on the website gives some clues to this beer (pale malt, munich, wheat, simcoe/mosaic, 75 IBU and 8% ABV.) I took a stab a creating a recipe since I couldn't find a clone out there on the Internet, and would love any thoughts/input/ideas from anyone who has had this beer. Here's what I have right now:
Mash 60 minutes @ 150
Boil 90 minutes
Yeast: WLP001 - California Ale
12 lbs Pale 2-row
1.5 lbs Munich 20L
1 lb White Wheat malt
.5 lb Crystal 40L
.5 lb Corn sugar (last 15 min of boil)
1.5 oz Simcoe (FWH)
1.0 oz Mosaic (5 min)
2.0 oz Mosaic (0 min)
3.0 oz Mosaic (dry hop 5 days)
