When I've been in Maui, I have really enjoyed Maui Brewing Company's Mosaic Mo' Betta DIPA. Unfortunately, they don't ship this brew to the mainland (well, they did once, according to their distribution manager), so I'd like to try to recreate it. The spec sheet on the website gives some clues to this beer (pale malt, munich, wheat, simcoe/mosaic, 75 IBU and 8% ABV.) I took a stab a creating a recipe since I couldn't find a clone out there on the Internet, and would love any thoughts/input/ideas from anyone who has had this beer. Here's what I have right now:

Mash 60 minutes @ 150
Boil 90 minutes
Yeast: WLP001 - California Ale

12 lbs Pale 2-row
1.5 lbs Munich 20L
1 lb White Wheat malt
.5 lb Crystal 40L
.5 lb Corn sugar (last 15 min of boil)
1.5 oz Simcoe (FWH)
1.0 oz Mosaic (5 min)
2.0 oz Mosaic (0 min)
3.0 oz Mosaic (dry hop 5 days)

I'm giving this one a go today, so I'll track it here and let you know how it turns out. Here's the final recipe:

3 Gallons
Mash 60 minutes @ 152
Boil 6 minutes
Efficiency target 75% (BIAB)

7lbs 2-row
1lbs Munich
.5lbs White Wheat Malt
.25lbs Crystal 40
2oz Corn Sugar

WLP001 - California Ale Yeast

1oz Simcoe - FWH
.5oz Mosaic - 5min
1.5oz Mosaic - 0min
.5oz Amarillo - 0min

2oz Mosaic - Dry hop
1oz Amarillo - Dry hop
 
A pretty good brew day. 3 hours from lighting the strike water to draining the kettle. Using the no chill method, so will probably pitch sometime late tonight, or, more likely tomorrow am.

Mash efficiency @ 84%
BH efficiency @ 76%

Pre-boil @ 1.050 (target 1.051)
Post boil @ 1.076 (target 1.075)

Overshot my volumes a bit as I'm still dialing in the setup in Beersmith, but extra volume with the right gravity is fine by me. I'll update this thread once I've got it in the keg in a few weeks.

I got this one into the keg yesterday morning, and force carbed it at 30 PSI until this afternoon. Pouring the first pints this evening on about 9 PSI, and, I have to say it's pretty darned close! It's a bit undercarbed still, but initial impressions are that it is very smooth and drinkable even though I overshot my ABV coming in at 8.5%. It's got great tropical flavors, very balanced bitterness, though I think that a more expressive yeast would be a good change for v2.....something that gives off some tropical fruit esters would be good (any suggestions out there?!) I will definitely brew this one again, and will note any minor tweaks that I make here. I am calling this one Hey Mo'!, and would love to hear from anyone who takes a stab at brewing it.....especially if you have had MBC's version and can make a comparison.

FWIW, I'm expecting this one to stay hazy, as it was a no-chill, and my experience with that technique thus far is that it's tough to get beers to drop clear without some fining.
