I've been all grain for 8+ years now and have always had exceptional beer head. I've been using a Mash and Boil for the last year and the head is always thin, poor and does not last long. This includes the same recipes that do great with a cooler. I notice the temp varies all over the place on the mash and boil. I've tried draining 3 quarts every ten minutes and pouring it over the top to regulate the temps. Does a varying temp between 5-10 pounds affect head?
