So I have a 6 gpm pump. Is that too fast for my homebrewing HERMS that I want to create? I have been reading and researching and seeing a lot of 3 gpm pumps.
 
You can always throttle the flow with a valve on the output side of the pump. That is an advantage of a mag drive pump.
 
Def go for the higher flow pump. You can always add a ball valve at the pump OUTLET (not the inlet, and that may result in cavitation and loss of prime), to restrict the flow to the level you desire.

Or depending on how you set things up you can always put a smaller fitting on the outlet with like a 1/4" hose to choke things down with too.. :)
