Hi

Im looking for a new project to start , i was thinking of Mango or coconut or pinapple mead or all 3 lol.

Does anyone have any recommendations or recipes i would really appreciate it.

I haven't worked with mango but I have done many other fruits. My recipe is pretty simple. I do a fairly standard BOMM protocol. After 2-3 weeks, I transfer the mead to secondary with FROZEN fruit in a strainer bag. Every day I "punch down" the fruit to keep it from drying out, molding, etc. On about day 5 I start "smooshing" the fruit to break it up. After 7-8 days I remove the bag (squeezing out everything I can) and let it ferment until it is done. I may also "top up" with extra mead.

1 lb/gallon - mild fruit flavor with some honey notes
2 lb/gallon - delicious, heavily fruited flavor
3 lb/gallon - the fruit flavors completely dominate the taste

Might also try something crazy and do a black tea and mango mead, something I've been wanting to try.

ETA: It's really handy to have a wide-mouth fermenter or bucket to make this easier.
 
Do all 3!

Ferment it with the Mango & pineapple (more mango than pineapple bcuz mango is more mild i think?). Then rack onto toasted coconut (that you toast).
