I went to my local health food sotre and picked up some maltodextrin that is 100% from corn. Would I be able to use this in place of corn sugar when making apfelwine?

Isn't MaltoDex what we use as UNFERMENTABLE sweetener?

If so, NO. This won't work. The point of the Corn sugar is to provide more fermentable sugar and produce alcohol.
Keep the MD though. You may like it to back sweeten at bottling.

I guess I'll just go grab some brown sugar, I want to get this rolling

Use table sugar. Brown sugar is just plain white sugar with mollasses added back into it. Table sugar will ferment out very similarly to corn sugar.
