I just put together the Ginger ale recipe linked in my sig. At 15 minutes remaining I added 3.5oz of malto-dextrin.

I put 2 gallons of water in the carboy, strained the wort in and added over a gallon to hit the 5 gallon mark.

OG was 1.060. The recipe calls for 1.052. I'm guessing this is because of the M-D.

Since M-D is mostly unfermentable, am I correct in thinking that mean my FG will be higher than the recipe as well?

Two points of the difference are due to the MD and the FG will be higher than that amount.

The rest of the difference may be due to the recipe being designed to a fermentation volume of 5.5 gallons and a final volume of 5. This is common and it allows for volume loss due to trub.
