The brunch stout recipe from Northern Brewer calls for 10# of Malting Company of Ireland Stout Malt. Any suggestions for a substitution for that that’ll be very comparable? Can’t get this stout malt from ritebrew.com where I do most ordering. Thanks.

Here is the description of the Ireland stout malt:

1.5-2°L. Irish Stout Malt is characterized by plump, round kernels with very low protein and high extract. Low kilning temperatures mean a very pale wort with high enzyme levels.

Golden Promise is generally about one half 'L' point lower in color than Maris Otter, but the mention of being in the 1.5L to 2L range almost suggests a Pilsner malt. That said, I would go with the Golden Promise even though it will be a smigde darker than the 1.5L to 2L range.

In the end, for a Stout the color of the base malt should be a moot point.

Would the flavor of both golden promise and maris otter pretty well match the stout malt? It is the only base malt in the recipe, I forgot to mention (although that’s probably obvious).

The answer "may" lie in the type of stout you are brewing. A sweet stout would likely benefit from Golden Promise or Maris Otter. A dry stout may actually benefit from Pilsner malt or standard 2-Row.
